Skýbová, T. Significant aspects of sustainable coffee and recommendations for cafés. Bachelor thesis. Brno: Mendel University in Brno, 2023. The aim of the bachelor thesis is to propose recommendations for cafes that will lead to the expansion of awareness and marketability of sustainable coffee. The literature search will introduce coffee as a commodity, sustainable coffee production and the various organisations that promote a sustainable approach to coffee. The information will be used in the results section. In the empirical part, the coffee sector will first be analysed. The main research of the thesis consists of semi-structured interviews, which are complemented by a questionnaire survey. Finally, various recommendations will be proposed to promote sustainable coffee awareness and marketability. These recommendations will be financially backed.
Analysis of international trade with choose commodity

The aim of the diploma thesis is to analyze the current situation in the international coffee trade. A questionnaire survey will be designed and conducted among local importers and coffee processors - roasters. This will be followed by an analysis of questionnaires, testing of selected hypotheses in the statistical program and drawing conclusions. The theoretical part of the diploma thesis is focused on the overall view of coffee trading. The work presents the commodity coffee and its types. Furthermore, the theoretical part focuses on trading in coffee as a commodity and in selected coffee and their subsequent processing options. Organizations dealing with coffee issues, major export and import countries are introduced. It also includes a look at the development of the price of coffee. Furthermore, the theoretical part approaches the issue of Fairtrade. Last but not least, the theoretical part focuses on the ecological sustainability of the international coffee trade. The practical part of the diploma thesis deals with the import of coffee to the Czech Republic and the export of coffee from the Czech Republic. The work also focuses on the use of the TARIC application to simulate the import and export of coffee. Based on the information obtained, a questionnaire is subsequently created, which will be distributed among importers of unroasted coffee to the Czech Republic - roasters. The next part of the practical work is the analysis of questionnaires, testing of selected hypotheses in the statistical program using Fisher's exact test and drawing conclusions.
Fair trade and Direct trade certification in marketing strategies of Czech coffee roasters and cafes

This diploma thesis is focused on the state of specialty coffee market in the Czech Republic, while concentrating on the position of the biggest coffee roasters and cafes on this market and their marketing strategies. Analysis of these marketing strategies is part of this thesis, with focus on approach of these roasters to Fair trade and Direct trade. Theoretical as well as practical part of this thesis presents findings from the Czech specialty coffee market, explains background of its fast development and the significance of alternative trade practices. The approach of coffee consumers to values presented by specialty coffee has been evaluated through a questionnaire survey. These values include certifications themselves and their ethical significance, as well as locality of roasting and therefore also accessibility of fresh and high quality product.
Coffee Trading on Commodity Markets

This thesis offers a comprehensive view of coffee trading on commodity markets. To describe the behavior of prices and their volatility, ARCH and GARCH models are used. These models analyse coffee prices of selected regions in Ethiopia, the birth place of coffee. The thesis connects the characteristics of soft commodity with current knowledge of financial econometrics. It also describes the effects of changes in exchange rates and oil prices on the price of coffee. Price volatility is examined with regard to deregulation and reforms on this market within the last three decades. Developments in the developing world caused a significant need for the progression and identification with the hedging instruments. These are closely linked to the globalized market with coffee, so it is conversely possible to absorb the shocks on small growers, who are significantly impacted by the globalized world.
COMPARISON OF DIRECT TRADE AND FAIR TRADE

Purpose of this thesis is to explore the question whether a new market through Direct trade, due to the absence of certification bodies and different market conditions ad-vantages over the already running Fair trade. Comparisons are coffee markets. Coffee is the most traded product in Fair trade. The research method is the comparison of dif-ferent systems. These are compared on the basis of the foregoing analysis of selected features of each market. According to the results, the comparison suggests that Direct trade can really bring benefits to participants on both, the end users and producers. In the case of end consumers are mainly the high quality final product. In the case of pro-ducers are primarily benefit higher purchase prices.
